Ox Tongue with Sultana Sauce
Serves 4 1 fresh ox tongue, about 4½ lb/2 kg bunch flavouring vegetables (carrot, celery and leek) 1 medium-sized onion 2 teaspoons salt 6 peppercorns for the sauce: 5 ox/150 g sultanas 1 ½ oz/40 g butter 2 tablespoons plain flour ¾-1¼ pints/5-7.5 dl stock from the tongue (see recipe) 2 tablespoons wine vinegar 2 tablespoons concentrated tomato purée 1 tablespoon caster sugar salt...
